That’s why we created the Your Choice tasting – an experience for those who want complete freedom to choose and a deeper insight into our style, terroir and philosophy. This tasting is designed for guests who are already familiar with our wines or wish to craft their own wine journey from our regular selection. With expert guidance you choose the wines and we reveal the stories behind each bottle – from the soils and micro-locations of Istria to the winemaking process and the vintages that shaped the wine. On the hills above Novigrad, there were three “kaštelirs” or forts: St. Dionysius, St. George, and Valaron. Three queens ruled those forts and oversaw the production of the finest products of the area, ensuring their sustainability over the centuries: the Queen of Salt, the Queen of Oil, and the Queen of Wine.
